Rubio’s® Eateries, the popular quick casual chain known for its distinctively delightful coastal cuisine and popularizing the fish taco, declared today that it’ll redesign 60 of its California-based eateries. With more upgrades scheduled for 2016, and completion anticipated by the end of 2015, the improved and new places are slated to be a visual reflection of the development and culinary progression of the brand.
“Since our foundation, Rubio’s has been a thought-leader in the restaurant group,” said Rubio’s Senior Vice President of Real Estate, Greg Semos. “As we evolve as a brand, we know the value of sharing our progression with our guests. In 2011, we started to set the wheels in motion with the relaunch of The Original Fish Taco(registered company). Since that time, we’ve added several advanced broiled seafood things to our menu, created our yearly CoastFest shore clean-up, and introduced our successful “To the Ocean” advertising campaign. Appearing to the next 30 years, it’s important our eateries represent who we are as a brand. We’re excited about that which we’ve attained and cannot wait to see that symbolized in store.”
Reflective of Rubio’s deeply rooted passion for the ocean, the eatery redesigns draw inspiration from the sea and characteristic components and aesthetics reminiscent of the shore. Colors of indigo, green, cobalt and sand sparkle through the restaurant and veranda with shimmering blue tiles that guide guests to Rubio’s signature salsa bar. Illustrative wall panels that depict Rubio’s rich history greet guests as they enter. Exceptional graphics detailing essential elements and the brand’s recipes are spread through the restaurant. Modern pendant light illuminates natural wood located throughout the community and restaurant seats while multicolored seats evoke ideas of sea and coral shapes.

Semos continued, “In order to comprehend the effect of our redesign efforts, we designated a preliminary evaluation site at our Carmel Mountain Ranch eatery in San Diego, Calif. In addition to the eatery redesigns, Rubio’s will also be starting seven new places by the end of 2015 and upgrading its name and symbol to represent its development. Needing to signify its vast coastal cuisine menu, Rubio’s will contain Coastal Grill in its emblem.
